Travelers departing Paris with Air France can now indulge in a refreshed collection of gourmet menus in both La Première and Business Class cabins, available through mid-year 2025. 

France’s flagship airline continues to partner with an acclaimed trio of culinary visionaries—Mauro Colagreco, Angelo Musa, and Régis Marcon—bringing the artistry of French haute cuisine to the skies. Each menu features premium French-sourced meats, poultry, dairy, and eggs, with fish procured from environmentally responsible fisheries. Vegetarian travelers are thoughtfully catered for with dedicated plant-based options.

Passengers in La Première suites are treated to a culinary journey hand-crafted by Mauro Colagreco, the celebrated chef behind the three Michelin-starred Mirazur in Menton. Showcasing the vibrant terroir of the Alpes-Maritimes, Colagreco presents a rotating selection of eight exquisite dishes, each inspired by the region’s bounty—think Mediterranean seafood, mountain herbs, and the iconic Menton citrus.

"In designing these dishes, I wanted to share the essence of Southern France, from the coastal flavors to the aromatic zest of local lemons. My goal is for each guest in La Première to savor not just the taste, but the story behind every ingredient," Colagreco explains.

Mauro Colagreco’s current La Première menu features:

  • Ravioli with Comté cheese and caramelized onion, finished with a rich porcini emulsion
  • Fresh asparagus topped with silky parmesan cream
  • Lobster dressed in a bright citrus vinaigrette
  • Sea bream baked in a savory crust, paired with royal zucchini, shellfish jus, and tarragon
  • Guinea fowl accompanied by roasted squash and an orange reduction
  • Roast chicken served alongside a salad of yellow zucchini, fennel, kumquat, and a saffron-lemon sauce
  • Lamb roulade with pistachio and kumquat confit, accented by verdant condiments
  • Herb-crusted rack of lamb with chard leaves stuffed with lamb confit and a Provençal-style sauce

Decadent La Première Desserts by Angelo Musa

World-renowned pastry master Angelo Musa—awarded Meilleur Ouvrier de France and crowned World Pastry Champion—brings his signature finesse to the dessert course. Musa’s quartet of desserts for La Première is a study in balance, refinement, and the purest flavors of France.

Angelo Musa’s La Première dessert collection includes:

Discerning Business Class guests are invited to experience the seasonal menus of Régis Marcon, the triple Michelin-starred chef and Bocuse d’Or laureate. Marcon’s new eight-course rotation, revealed throughout the season, is designed to deliver a sophisticated taste of contemporary French cuisine at altitude.

"True culinary beauty is rooted in nature. Through these menus, I aim to offer Air France travelers a connection to the French landscape and its flavors," says Marcon. 

The current Business Class selection by Régis Marcon includes:

  • Beef fillet with a rich port reduction and glazed carrots
  • Sautéed shrimp paired with Puy lentils and orange-infused butter sauce
  • Duck lasagna layered with tangy blackcurrant sauce
  • Creamy risotto with artichokes and woodland mushrooms
  • Chicken with rosemary and grapes, served alongside creamy polenta
  • Basil-infused ratatouille cake
  • Veal shank with a luxurious morel mushroom sauce atop spelt and pea risotto
  • Salmon fillet with vegetable fondue and spring vegetables
