Throughout 2025, travelers in Business and First Class departing Hong Kong on long-haul routes—excluding Dubai and Tel Aviv—are treated to an elevated culinary journey that celebrates the city’s rich gastronomic heritage at 35,000 feet.
This curated menu pays homage to Hong Kong’s culinary legacy and creative spirit, featuring signature dishes such as wok-seared lobster infused with ginger and scallion, and slow-braised Iberico pork belly glazed in a fragrant soy reduction. For a sweet finale, guests can savor chrysanthemum and longan jelly, capturing delicate floral notes unique to the region.

Duddell’s culinary team has meticulously crafted each dish to reflect Hong Kong’s timeless tastes with a modern sensibility, aiming to share the city’s celebrated cuisine with a global audience.
First Class passengers can indulge in refined starters such as chilled abalone and cucumber in a black vinegar dressing, or minced pork with pomelo and garden vegetables. Main course highlights include red-braised Iberico pork belly with daikon and wok-fried lobster in a zesty white pepper sauce. The dessert selection is headlined by chrysanthemum and longan jelly, offering a fragrant, elegant finish.
Business Class guests are offered dishes like steamed halibut with cordyceps flower, aged mandarin peel, and preserved black olive, as well as barramundi fillet with pickled mustard greens in a tangy rice noodle soup—a perfect light option available mid-flight. Desserts draw inspiration from Cantonese classics, such as ginger milk pudding reminiscent of traditional ginger milk curd, or a strawberry yoghurt pudding inspired by Beijing-style yoghurt’s sweet-tart profile.
