As the appetite for plant-based gastronomy surges worldwide, Emirates is setting a new industry benchmark for ethical, sustainable, and health-focused culinary experiences at cruising altitude.

Emirates stands at the forefront of airline innovation, responding to the exponential growth of the vegan demographic by embedding plant-based cuisine into its core premium offering. While vegan meals were initially introduced in the 1990s to accommodate religious preferences on select routes, the airline has since observed a dramatic uptick in passenger requests for vegan options, particularly from North America, Australia, Europe, the UK, and now increasingly from Beirut, Cairo, and Taipei.

The latest 100% plant-based menu is the result of over a year of meticulous development at Emirates Flight Catering in Dubai. A diverse culinary committee—featuring both vegan and non-vegan chefs—has curated an exceptional array of international dishes, drawing inspiration from Chinese, Indian, and Middle Eastern culinary traditions.

Emirates’ commitment to sustainability is equally impressive. Fresh produce is sourced from local UAE growers, with salads, kale, heritage cherry tomatoes, and aromatic herbs cultivated at Bustanica, Emirates Flight Catering’s pioneering vertical hydroponics farm. As the world’s largest facility of its kind, Bustanica nurtures over one million plants at any given moment, ensuring unrivaled freshness and eco-friendly sourcing for every meal served.

Our experience sampling the menu revealed a level of finesse typically reserved for top-tier restaurants. Emirates’ acclaimed chefs utilize premium, health-conscious ingredients to create imaginative dishes such as vegan mapo tofu, zucchini tartlets, seared king oyster mushrooms, jackfruit biryani, and delicately sliced kohlrabi with burnt orange zest. Dessert highlights include a decadent chocolate truffle torte with roasted hazelnuts and a grape tart crowned with rose-petal confit, vanilla bean custard, and berry coulis.
