Flying with SWISS in 2025 means indulging in an exclusive culinary partnership: the latest “SWISS Taste of Switzerland” menus are curated by the acclaimed Restaurant de l’Hôtel de Ville, located in Crissier, Canton Vaud.

Travelers in First and Business Class are treated to the artistry of Chef Franck Giovannini, whose three Michelin-starred restaurant near Lausanne is celebrated for its refined, contemporary Swiss cuisine. Chef Giovannini, at the helm since 2016, is renowned for his creative approach, utilizing the freshest local produce to craft dishes that are both elegant and deeply rooted in Swiss tradition.

During our recent flight, the First Class experience began with delicate langoustine paired with a vibrant tomato mousse, followed by a main of tender veal filet mignon accompanied by conchiglioni pasta filled with smoky aubergine caviar. 

Business Class guests can choose between prime beef tenderloin with aromatic pesto polenta or a succulent grilled chicken breast served alongside hand-rolled gnocchetti di Zita, finished with a regional raspberry and caramelized pistachio éclair—a nod to Vaud’s pastry heritage.

Premium Economy travelers also enjoy a taste of Canton Vaud’s terroir. The menu highlights regional cheeses such as Gruyère and Bleu du Village, while dessert showcases a classic apricot tart, celebrating the canton’s celebrated fruit orchards.

Since its inception in 2002, the 'SWISS Taste of Switzerland' initiative has set the standard for inflight dining, inviting award-winning chefs from every Swiss canton to design seasonal, regionally inspired menus for First and Business Class. In 2022, the program expanded to Premium Economy, ensuring a broader range of passengers access to authentic Swiss gastronomy. New culinary collaborations debut quarterly, always paired with wines and cheeses sourced from the chef’s home region. To date, 84 top chefs representing all 26 cantons have participated, further solidifying SWISS’s reputation for inflight gastronomy excellence.
