SWISS elevates its First and Business Class culinary journey, partnering with Michelin-starred chef Alexandra Müller to showcase the rich gastronomy of Canton Fribourg. Continuing its acclaimed «SWISS Taste of Switzerland» program, the airline introduces an all-new seasonal menu crafted by Müller, head chef of the renowned «Romantik Hôtel L'Etoile» in Charmey. This bespoke menu, available for six months from June 2025, celebrates the region’s heritage and culinary artistry, emphasizing fresh, locally sourced ingredients from western Switzerland.
First and Business Class guests on SWISS long-haul routes can indulge in a curated selection of Fribourg-inspired dishes. For First Class, Müller’s creations include refined starters such as leek with silk-smooth egg yolk cream and aromatic truffle vinaigrette, followed by main courses like tender venison encrusted with Cuchaule and paired with Botzi pears—an iconic local treat. To conclude, passengers are treated to a choice of white or dark Toblerone chocolate mousse with Berton biscuit crumble or handcrafted meringues from the celebrated «Angélo Rime» bakery. Regional favorites, including saucisson du Vully and the traditional moitié-moitié fondue, further enrich the offering.
Business Class travelers are greeted with a starter of delicately seared beef entrecôte tataki, accompanied by a vibrant beetroot-pear salad and Gruyère blue cheese. The main course features slow-braised beef brisket in demi-glace, complemented by creamy sweet potato purée. For dessert, a zesty yuzu lemon meringue tart arrives crowned with the region’s legendary Gruyère double cream.
Cheese aficionados will delight in a curated selection of artisanal cheeses from Fribourg's boutique producers, including a 15-month-aged Gruyère Vieux AOP, the distinguished Vacherin Fribourgeois Vieux AOP, and the velvety Bleu de la Gruyère, ensuring a truly authentic Swiss culinary finale.
