First-Class Italian Cuisine in the Maldives

The Maldives, with its crystalline blue lagoons and powder-soft, sunlit beaches, remains the epitome of luxury island getaways.

For connoisseurs seeking to elevate their stay, Coco Bodu Hithi now offers an extraordinary culinary collaboration: a two-week residency by Michelin-starred chef Carmelo Greco, who brings the essence of authentic Italian gastronomy to this tropical haven.

This exclusive event allows guests to indulge in signature Italian cuisine, meticulously crafted by Chef Greco, all set against the backdrop of the Maldives’ serene beauty.

Carmelo Greco

Kicking off on March 18, Carmelo Greco, originally from Sicily and celebrated for his innovative approach to Italian classics, will host a series of gourmet dinners and hands-on masterclasses for Coco Bodu Hithi’s discerning guests.

Chef Greco’s culinary foundation was shaped in Piedmont under the mentorship of the legendary Lidia Vanzino Alciati at Da Guido, a formative experience that continues to influence his refined interpretations of Italy’s regional cuisine.

Reflecting on his mentor, Greco shares: “Lidia set the standard for Piedmontese cooking. Her dedication to preserving and reinventing traditional Italian flavors has inspired generations of chefs, myself included.”

5-star Maldives resort Coco Bodu Hithi

At just 20, Greco relocated to Germany, where he co-founded Osteria Enoteca. The restaurant’s reputation for exceptional Italian fare quickly earned it a Michelin star in 1996, affirming his place among Europe’s culinary elite.

In 2010, Greco launched his eponymous Ristorante Carmelo Greco in Frankfurt, where he continues to champion seasonal, locally sourced ingredients and evolving menus. As he notes: “Our kitchen philosophy is rooted in freshness and quality, so our offerings change with the best the market provides.”

Among Greco’s celebrated dishes are Fassona beef Filetto Rossini, delicate Tortelli Carbonara and Amatriciana, and the iconic Vitello Tonnato. Guests at Coco Bodu Hithi will have the rare opportunity to savor these specialties within the resort’s chic yet relaxed dining venues, known for their understated sophistication and attentive service.
