Cathay Pacific’s new Spanish-inspired inflight menu

To celebrate its popular Hong Kong–Madrid service, Cathay Pacific has partnered with The Langham, Hong Kong, introducing a bespoke Spanish-inspired inflight menu crafted exclusively for this route.

The Langham, Hong Kong—renowned for its five acclaimed dining establishments—stands among Cathay Pacific’s elite culinary collaborators, helping to redefine premium inflight gastronomy. This partnership brings innovative Spanish cuisine, curated by Executive Chef Pedro Samper, to Business Class guests on flights between Hong Kong and Madrid in 2025.

According to Cathay Pacific’s Head of Catering, Aaron Claxton, "From vibrant tapas and rustic soups to inventive salads and sumptuous mains, Spanish culinary traditions reflect a rich tapestry of regional influences. We are proud to work with The Langham, Hong Kong, to offer our travellers an authentic journey through Spain’s iconic flavours. This marks our first dedicated Spanish menu onboard, providing passengers with a genuine taste of Spain as they journey to the cosmopolitan capital of Madrid."

The menu draws inspiration from cherished Spanish recipes. A highlight is the "Classic Basque-style braised cod with clams in salsa verde," a dish that hails from Chef Samper’s native San Sebastián, a city celebrated for its gastronomic heritage. This comforting favourite is often enjoyed during local festivities and family gatherings, embodying the spirit of Basque cuisine.

To deliver an authentic Spanish dining experience at altitude, Cathay Pacific’s culinary team selects only premium ingredients that retain their integrity in the cabin environment. The "Slow-cooked Iberico pork cheek in Tempranillo wine with truffle-infused potatoes" showcases Spain’s finest produce and wine, with slow-cooking techniques ensuring the meat remains tender and flavoursome, even at cruising altitude.

Chef Samper, reflecting on the partnership, shared: "As a Spaniard, I am honoured to introduce travellers to the vibrant diversity of my homeland’s cuisine. Each region of Spain offers its own unique culinary identity, and it is a privilege to craft an authentic dining experience for Cathay Pacific guests above the clouds."

The Hong Kong–Madrid route is operated by Cathay Pacific’s Boeing 777-300ER, featuring Business Class, Premium Economy, and Economy Class cabins. Flights depart four times weekly—on Tuesdays, Thursdays, Saturdays, and Sundays—ensuring seamless access between Asia and Spain for discerning travellers.
