SWISS introduces an exclusive winter menu for long-haul First and Business Class guests, featuring signature creations from St. Moritz's most acclaimed kitchens. These bespoke dishes are available on board for a limited three-month winter season.
As part of its celebrated “SWISS Taste of Switzerland” program—recognized for culinary innovation—Swiss International Air Lines invites travelers to experience the gastronomic heritage of Canton Grisons, nestled in southeast Switzerland. From early December through March, passengers in premium cabins departing Switzerland will savor curated menus designed by Frank Schuster, the renowned executive chef of Lej da Staz and el paradiso Mountain Club, both situated in the prestigious resort area of St. Moritz. Chef Schuster and his team expertly blend traditional alpine recipes with refined techniques, presenting a harmony of hearty classics and elegant patisserie, all inspired by the region’s seasonal bounty.
Signature “Meat Love” and Alpine Starters in SWISS First Class
For First Class travelers, the winter collection highlights the unparalleled ambiance of el paradiso Mountain Club, perched 2,181 meters above sea level overlooking St. Moritz. The menu opens with innovative starters such as an alpine-inspired poke bowl featuring barley, cured salmon trout, and a fig-mustard emulsion. The centerpiece is the celebrated “Meat Love” meatloaf, elevated with a rich morel sauce, reflecting the rustic yet sophisticated flair of the region. To conclude, guests indulge in a petite version of the iconic el paradiso millefeuille—crisp pastry layered with silky crème pâtissière, a true patisserie masterpiece.
Braised Beef and Local Delicacies in SWISS Business Class
Business Class passengers are treated to specialties from the picturesque Lej da Staz restaurant, nestled beside tranquil Lake Staz. Starters include house-smoked char accompanied by a barley salad. For the main course, guests savor slow-braised beef in a robust red wine reduction, paired with creamy alpine cheese polenta. Dessert is a seasonal chestnut-mascarpone mousse atop a delicate white chocolate and pear base, capturing the essence of a Swiss winter.
Pairings: Regional Cheeses and Swiss Wines
To enhance the culinary experience and immerse guests in the flavors of Grisons, SWISS offers a thoughtfully curated selection of local cheeses and wines. The cheese board features Ftan organic mountain cheese and Engadin Forte, both renowned in the region. In First Class, wine selections include a 2022 Chardonnay from Davaz and a 2021 Trocla Nera Pinot Noir from Obrecht. Business Class guests enjoy a 2022 Pinot Noir Spätlese Barrique from Von Salis in Malans and a vibrant 2022 Riesling-Silvaner from the Hermann estate. Each pairing is chosen to complement the menu and showcase the best of Swiss terroir.
