Our recent return to Enoteca Pinchiorri in Florence reaffirmed its reputation for extraordinary cuisine and service. During our latest visit, we eagerly sampled the chef’s current tasting menu, eager to discover the latest innovations in their acclaimed kitchen.

Enoteca Pinchiorri’s legacy began in the 1970s when French-born Annie Feolde arrived in Florence and crossed paths with Giorgio Pinchiorri, a renowned wine connoisseur. Giorgio’s remarkable ability to source rare vintages from elite vineyards quickly garnered attention among wine enthusiasts.

The pair launched their venture as Enoteca Nazionale, where Annie paired refined, light cuisine with Giorgio’s exceptional wine selection. Their innovative approach—serving rare wines by the glass—helped redefine wine bar culture in Florence and beyond.

Initially, guests raved about the wines, but Annie was determined that her culinary creations should be equally celebrated. After honing her skills at acclaimed restaurants across France and Italy, she returned with a fresh perspective. By the 1980s, the establishment, now recognized as Enoteca Pinchiorri, proudly earned its first Michelin star, cementing its place among the world’s elite dining destinations.

Setting: Historic Palazzo in Florence’s Heart

Enoteca Pinchiorri resides on the ground floor of the grand Palazzo Jacometti-Cioffi, a majestic 19th-century residence set just steps from the iconic Santa Croce Basilica. The palazzo’s elegant architecture creates a refined yet inviting atmosphere for a truly memorable dining experience.

Service Excellence & Tasting Experience

Upon arrival, we were graciously welcomed by Antonella, daughter of Annie and Giorgio, who led us to a secluded table in one of the five beautifully appointed dining salons. Our evening commenced with a glass of Champagne, accompanied by the soft melodies of a live pianist. Annie herself visited our table, generously sharing stories of the restaurant’s heritage and assisting with menu selections.

This season, Enoteca Pinchiorri offers a dynamic 8-course “Contemporary” tasting menu, showcasing the finest Italian ingredients and progressive techniques. The iconic 16-course “Degustazione” menu is rotated throughout the year, ensuring each visit feels fresh and exclusive.

Antonio, the veteran sommelier, expertly curated our wine journey. The restaurant’s legendary wine list—one of the most comprehensive globally—features multiple wine pairing options, including five distinct pairings ranging from premium to ultra-exclusive levels. The pinnacle pairing boasts rare vintages with a price tag of up to €10,000. We selected a mid-tier pairing, which perfectly complemented each course.

Our meal began with exquisite amuse-bouches, followed by dishes such as delicately steamed cod with mimosa potatoes and a vibrant parsley sauce; John Dory and octopus accompanied by spinach sprouts, silky béarnaise, and a refreshing lemon-chamomile gelée; and handmade tagliatelle with fresh herbs, scampi, green beans, and pancetta. A standout was the agnolotti filled with white polenta and local vineyard snails.

Main courses included a rabbit croquette with olives and market greens, and a refined presentation of Mora Romagnola suckling pig with parsley, salsa verde, and citrus notes. Cheese was represented by a gorgonzola semifreddo with beans, preceding a zesty finale: lemon delight with limoncello, almond milk, and aromatic herbs.

Each bite was impeccably executed, with flavors that balanced tradition and innovation. The synergy between food and wine is unparalleled, and the attentive yet warm service elevated the evening into a true celebration of Italian gastronomy.

World-Class Wine Cellar: A Treasure Beneath Florence

Following dinner, we were privileged with a private tour of the legendary wine cellar—a veritable vault of oenological history. Security is paramount, with multiple layers of protection guarding an inventory valued at over €100 million. Among the cellar’s treasures are irreplaceable bottles, including an 1872 Sassicaia and a Methuselah (6L) valued at €300,000. Notably, Giorgio once declined a multimillion-euro offer for a coveted Romanée-Conti, underscoring the cellar’s prestige and exclusivity.

Having evolved dramatically since its inception, the cellar now houses more than 120,000 bottles representing over 4,000 wine labels from Italy, France, and beyond. Every acquisition is meticulously vetted for provenance and quality, resulting in one of the world’s most comprehensive and historic wine collections.
