Mercury Lounge, the iconic rooftop bar crowning the Four Seasons Resort Dubai at Jumeirah Beach, has reopened for the 2025 season, showcasing a contemporary redesign and an all-new Mediterranean culinary direction.
Under the leadership of new General Manager Raul Carcelero—whose distinguished resume includes Zuma London, Zuma Dubai, Nusret Dubai, and Ossiano—the Mercury Lounge now features plush, custom furnishings and intimate nooks ideal for private celebrations, alongside expanded social spaces for larger gatherings. Carcelero’s vision is to reestablish Mercury Lounge as the epicenter of Dubai’s sophisticated nightlife.
Guests can still enjoy the venue’s five exclusive majlises, including the renowned Sky Fall suite, which continues to set the standard for private rooftop dining in Dubai. Elevated above the city, the lounge delivers panoramic vistas of the Dubai skyline, Palm Jumeirah, and the tranquil Arabian Gulf—a setting sought after by discerning travelers and locals alike.

The venue has also introduced a refined Mediterranean menu, inspired by the coastal flavors of Spain, Italy, and Lebanon, reimagined through a modern lens. The culinary team has curated a selection that blends innovation with tradition, appealing to epicureans seeking authenticity and creativity.
The updated menu, available nightly from 6:00pm to 11:30pm, is thoughtfully divided into eight categories: Crudos, Small Plates, Salads, From the Sea, From the Land, Pasta & Risotto, Sides, and Sweets, offering a diverse dining journey.

Highlights include foie gras kibbeh with rosemary and raspberry preserve; a striking half-metre octopus carpaccio with shaved fennel and radish; Sicilian Mazara red prawns complemented by toasted hazelnuts; and delicate ricotta-blueberry beignets finished with salted caramel. Signature favorites such as creamy burrata with heirloom tomatoes, yellowfin tuna tartare, and braised beef ravioli with crispy artichoke remain on the menu, alongside decadent desserts like mini beignets and chocolate pearls.
For late-night cravings, a curated "late bites" menu is served from 11:30pm to 1:00am, perfect for those lingering under the stars.
