SWISS elevates its premium cabin dining with an exclusive menu designed by Michelin-starred chef Alexandra Müller, spotlighting authentic regional cuisine from the Canton of Fribourg.

Continuing its acclaimed «SWISS Taste of Switzerland» program, the airline has debuted its latest gastronomic offerings for First and Business Class guests on intercontinental routes. These refined dishes, available for a six-month rotation starting this June, showcase the culinary artistry of Alexandra Müller, head chef at the esteemed Romantik Hôtel L'Etoile in Charmey.

This season's collaboration celebrates the rich culinary traditions of western Switzerland’s Canton Fribourg, with a focus on artisanal ingredients and contemporary French techniques. Chef Müller, renowned for her creative interpretations of regional recipes, brings a fresh perspective to the in-flight experience.

The bespoke menu is reserved for First and Business Class passengers flying SWISS long-haul routes, underscoring the airline’s commitment to luxury and authenticity.

For those traveling in First Class, highlights include a delicate starter of leek infused with egg yolk cream and finished with a truffle vinaigrette, followed by a main of venison encrusted with Cuchaule bread and complemented by Botzi pears—an iconic Fribourg specialty.

Dessert offerings are equally decadent: guests may indulge in a choice of white or dark chocolate Toblerone mousse with Berton biscuit crumble, or savor meringues sourced from the renowned Angélo Rime bakery. Regional favorites such as saucisson du Vully and the celebrated moitié-moitié fondue are also featured, ensuring an authentic taste of Fribourg’s terroir.

Business Class travelers are treated to a starter of beef entrecôte tataki, paired with beetroot-pear salad and Gruyère blue cheese. The main course features slow-braised beef brisket with a rich demi-glace and velvety sweet potato purée. For dessert, a yuzu lemon meringue tart with the region’s famed Gruyère double cream adds a sophisticated finish.

Cheese aficionados will appreciate a curated selection of local specialty cheeses, matured by Fribourg’s master cheesemakers. Selections include a 15-month aged Gruyère Vieux AOP, Vacherin Fribourgeois Vieux AOP, and the regionally celebrated Bleu de la Gruyère, each offering a nuanced taste of Switzerland’s cheese heritage.
