For the tenth year running, the acclaimed Dining Room at Whatley Manor Hotel and Spa, under the guidance of Executive Chef Martin Burge, proudly maintains its prestigious two Michelin stars.
Nestled in the picturesque countryside of Malmesbury, Wiltshire, The Dining Room stands among an elite group of just 20 restaurants in the UK to hold two Michelin stars in 2025.
The Michelin Guide, regarded as Europe’s definitive authority for fine dining and luxury hospitality, praises The Dining Room as “an elegant, contemporary setting with views over manicured kitchen gardens, housed within a refined country estate.”

Chef Burge’s degustation experiences—Signature, Seasonal, and Plant-Based Menus—replaced the former à la carte offering over two years ago, earning enthusiastic reviews for their flexibility and culinary artistry. Guests appreciate the freedom to curate their own journey across all three menus.

“This past year, we’ve introduced several innovative creations,” he added. “A highlight from the Plant-Based menu is the Heritage Beetroot with Horseradish Snow, presented over dry ice for dramatic effect. Signature favourites such as the Chicory Mousse remain mainstays, while the ever-changing Seasonal menu allows us to showcase the freshest local ingredients at their peak.”
Chef Burge has led Whatley Manor’s culinary direction since its opening in 2003, securing the restaurant’s first Michelin star in 2005 and its second in 2009. The consistency of excellence has become a hallmark of The Dining Room’s reputation.
