SWISS has joined forces with IGNIV, the acclaimed restaurant at Grand Resort Bad Ragaz in Canton St. Gallen, to bring the signature culinary artistry of celebrated Swiss chef Silvio Germann to its premium cabins. Over the next quarter, travelers flying long-haul from Switzerland in Business and First Class can indulge in a bespoke menu inspired by the region’s finest ingredients and gastronomic traditions.
This latest chapter in the multi-award-winning ‘SWISS Taste of Switzerland’ program highlights Eastern Switzerland’s culinary wealth, with Chef Silvio Germann—renowned for his innovative approach at IGNIV by Andreas Caminada—curating the inflight offerings. Chef Germann, who continues to hold both a Michelin star and 17 Gault&Millau points, has been repeatedly recognized for his contemporary yet deeply rooted cuisine. His new creations for SWISS are designed to surprise and delight discerning travelers with sophisticated flavors and refined presentations, solidifying SWISS’s reputation for world-class inflight dining.
First Class passengers are treated to a seasonal selection of starters such as truffle-infused mousse paired with farm-fresh egg, aromatic leek salad, and the renowned Belper Knolle cheese. The charcuterie board features regional delicacies, including wild game salami and chamois salsiz, sourced in collaboration with local artisan Roger Zogg of Wilde 13, a trusted supplier to IGNIV. The highlight is a handcrafted St. Gallen game sausage, exclusively created for this partnership, alongside mains like pan-seared black cod in a delicate seafood nage and tender beef fillet with shallot jus, complemented by a leek and sour cream quiche. The experience concludes with a tangy sea buckthorn jelly tart, balanced by a velvety sour cream.
Business Class guests also enjoy an elevated dining journey. Starters include Balik salmon sashimi dressed with dill crème and a smoked fish mousse. Main course selections span sautéed cod fillet in seafood nage and slow-braised veal ragout enriched with vegetable jus. To further immerse guests in the flavors of St. Gallen, SWISS offers a curated cheese plate featuring Goat Reblochon and the acclaimed Jersey Blue by master cheesemaker Willi Schmid of Lichtensteig. The First Class wine list showcases exclusive labels such as the 2022 Schloss Weinfelden Cuvée White and the 2021 Pinot Noir from Burkhart Winery, crafted specifically for SWISS. Meanwhile, Business Class travelers can savor a 2021 Sélection Red from Schmid Wetli and a 2022 Gropp White from Rutishauser Winery, both exemplifying the region’s viticultural excellence.
